1 tablespoon olive oil
1 cup long grain brown rice ( or white rice )
3 anaheim green chilies , roasted ( or New Mexican chiles )
5 mint leaves , chopped

Instructions

4.Stir in pureed mixture, bring to a boil, then reduce heat to low, cover, and simmer until rice is tender, about 35 minutes.
5.Remove from heat and let sit, covered, for 5 minutes.
6.Stir in chilies and mint.
7.Fluff with a fork and serve.
