1/2 teaspoon salt
1 tablespoon butter , unsalted
1 tablespoon olive oil
3 slices bacon , cut into 1/4-inch slivers
1/2 medium red onion , diced
1 garlic clove , peeled and minced
1/2 green bell pepper , medium , stemmed , seeded , and cut into 1/4-inch dice
1/2 red bell pepper , medium , stemmed , seeded , and cut into 1/4-inch dice
1/2 cup corn kernel , cooked
1/4 cup raisins , dark
1/4 cup raisins , golden
3 tablespoons Italian parsley , chopped
salt & freshly ground black pepper , to taste

Instructions

1.Rinse the rice in a fine mesh strainer and drain well.
