Maple Custard Rice Pudding is a classic comfort food that has been around for centuries. It's a popular dessert in many cultures worldwide; some versions use different sweeteners such as honey or brown sugar instead of maple syrup. This version combines rich creamy custard with cooked rice for an added twist. It can be served warm or chilled, depending on your preference, and it can be enjoyed as a standalone dessert or with some fruit compote or whipped cream on top. This recipe is easy to follow and yields a large batch, making it perfect for potlucks or family gatherings.

Instructions

1.Preheat your oven to 350°F (180°C).
2.In a large saucepan, mix milk, light cream, vanilla, and salt together. Heat until just hot and steaming, then remove from heat.
3.In another mixing bowl, whisk maple syrup and eggs together until light and fluffy. Gradually add in hot milk mixture, whisking continuously until smooth.
4.Stir in cooked rice into the custard mixture, then pour the mixture into a greased 9 x 13-inch baking dish.
5.Place the baking dish in a larger baking pan and add enough hot water until it reaches halfway up the sides of the smaller dish.
6.Bake for 35-40 minutes or until set. Let it cool to room temperature, then chill in the fridge for at least an hour before serving. Drizzle with additional maple syrup to your liking.
