Ingredients

2 leftover lean pork loin boneless pork chops or 14 ounces leftover lean pork loin boneless pork chops
1/3 cup chopped white onion
1 pinch salt
1 cup frozen peas
1 cup frozen corn
2 teaspoons olive oil
1 tablespoon olive oil
2 tablespoons light teriyaki sauce
3 tablespoons light soy sauce
1 teaspoon course ground tellicherry pepper
1 cup leftover cooked chinese rice or 5 1/4 ounces cooked chinese rice
4 large eggs
2 teaspoons butter

Instructions

1.Heat 2 teaspoons of olive oil in a cast-iron skillet over medium-high heat.
2.Add the chopped white onion and a pinch of salt. Sauté until the onion is translucent for about 2-3 minutes.
3.Add the frozen peas and corn to the skillet and sauté until the vegetables are heated completely through. Reserve the vegetables onto a plate.
4.In the same skillet, add 1 tablespoon of olive oil and the leftover pork. Sauté until the pork is crispy for about 3 minutes.
5.Add light teriyaki sauce, light soy sauce, and course ground tellicherry pepper to the skillet. Cook for another 2 minutes.
6.Add leftovers cooked Chinese rice to the skillet. Mix everything together and cook for a minute or two. Make a well in the center of the skillet and break 4 large eggs into it. Scramble the eggs and mix them with the rice mixture.
7.Add the reserved vegetables back to the skillet and stir to combine everything. Finish the dish off by stirring in 2 teaspoons of butter. Serve the hot Cast Iron Pork Fried Rice directly from the skillet.
