Ingredients

5 eggs , lightly beaten
1/8 teaspoon black pepper

1 cup fresh bean sprout
1/4 cup green onion , finely chopped
1/4 cup sliced celery
1/4 cup slivered yellow onion
1 teaspoon soy sauce
1/4 teaspoon cornstarch
1 teaspoon sesame oil
1 1 cup cooked chicken or 1 cup cooked shrimp , chopped
8 slices soft white bread ( such as Wonder )
cooking oil
4 pieces iceberg lettuce
4 -8 slices ripe tomatoes
4 dill pickle slices
1/4 cup mayonnaise

Instructions

1.In a bowl, whisk together the black pepper, salt, and eggs until evenly blended.
2.Add the bean sprouts, green onion, celery, yellow onion, soy sauce, cornstarch, and sesame oil to the eggs mixture and mix everything thoroughly.
3.Add the chopped chicken or shrimp to the bowl and toss it all together until well-combined.
4.Heat up cooking oil in a skillet and add the egg mixture to the skillet. Cook the mixture over medium heat for 2-3 minutes on each side or until the eggs are cooked through.
5.Spread mayonnaise evenly on one side of all bread slices and place cooked egg on top of the mayo on 4 slices of bread. Top each sandwich with a piece of iceberg lettuce, slices of ripe tomato, and a slice of dill pickle.
6.Place the other slices of bread on top of the fillings and cut each sandwich in half. Serve and enjoy!
