Ingredients

1 lb gai lan or 1 lb chinese broccoli
2 teaspoons salt
1 teaspoon baking soda
1 garlic clove , sliced
1 inch gingerroot
2 teaspoons toasted sesame seeds
3 tablespoons oyster sauce
3 tablespoons water or 3 tablespoons chicken broth
1 tablespoon mirin or 1 tablespoon dry sherry
1 tablespoon sugar

Instructions

1.Bring a large pot of water to a boil.
2.Add salt and baking soda to the water, stirring until dissolved.

5.In a small bowl, whisk together the oyster sauce, water or chicken broth, mirin or dry sherry, and sugar until well combined.
6.Cut the gingerroot into thin matchsticks.
7.Heat a wok or large skillet over high heat and add 1 tablespoon of oil.
8.Add the gingerroot and garlic, stirring continuously for 30 seconds until fragrant.
9.Add the gai-lan to the skillet and stir-fry for 1-2 minutes until heated through.
10.Pour in the sauce mixture and continue to stir-fry for another 1-2 minutes until the gai-lan is coated in sauce.
11.Sprinkle with toasted sesame seeds and serve hot.
