Ingredients

12 Chinese black mushrooms , soak and remove stems
3 cups chicken broth
1 teaspoon ginger , minced
1 teaspoon salt
1 tablespoon granulated onion
1 tablespoon sugar
1 teaspoon soy sauce
1 lb tofu , drain and cut into cubes
3 chinese okra , peel and cut into chucks

2 stalks green onions , 1 inch pieces

Instructions

1.In a pot, simmer Chinese black mushrooms, ginger and chicken broth over medium heat until the mushrooms soften. This will take around 10-15 minutes.

3.Once the mushrooms have softened, remove them from the pot and slice them into thin pieces.
4.Add tofu to the same pot and cook for several minutes until heated through.
5.Remove the tofu from the pot and set aside.
6.Add some oil to the pot and stir-fry the okra until it turns brown.
7.Gradually add in the cornstarch roux to thicken the mixture.
8.Add in the sliced mushrooms, green onions, and tofu.
9.Continue stirring for another 2-3 minutes.
10.Serve hot over rice.
