Ingredients

1/3 cup soy sauce , divided
1/4 cup peanut oil , divided
1/4 cup szechuan peppercorns , lightly crushed
2 teaspoons fresh ground black pepper , plus more to taste
2 teaspoons honey
2 teaspoons toasted sesame oil
8 garlic cloves , finely chopped
2 scallions , finely chopped
1 ginger , peeled finely chopped
salt , to taste
2 lbs whole chicken wings , tips removed
6 bamboo skewers , soaked in water for 30 minutes
1/4 cup rice vinegar
2 tablespoons hot sesame chili oil
Mi Zhi Ji Chi Chuan (Beijing Chicken Wings) are a popular Chinese dish that originated in the city of Beijing. These wings are marinated in a blend of soy sauce, honey, sesame oil, Szechuan peppercorns, garlic, ginger, and scallions. They are then grilled and served with a dipping sauce made from rice vinegar and hot sesame chili oil. Instructions

1.In a large bowl, whisk together 1/4 cup soy sauce, 1/8 cup peanut oil, Szechuan peppercorns, black pepper, honey, sesame oil, garlic, scallions, ginger, and salt.
2.Rinse chicken wings and pat dry.
3.Add chicken wings to the bowl and use your hands to coat them well with the marinade. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
4.Preheat the grill to medium-high heat.
5.Remove the chicken wings from the marinade.
6.Thread the wings tightly onto skewers (about 3 wings per skewer).
7.Grill for about 10 minutes each side or until cooked through, brushing with the remaining soy sauce and peanut oil marinade.
8.In a small bowl, whisk together rice vinegar and hot sesame chili oil and serve as a dipping sauce alongside the wings.
