Ingredients

24 large fresh mushrooms , cleaned ( about 1 pound )
1/2 lb ground chicken
2 garlic cloves , minced
1/4 cup fine dry breadcrumb
3 tablespoons grated parmesan cheese
1/4 cup thinly sliced green onion
3 tablespoons reduced sodium soy sauce , divided
1 egg white , lightly beaten
1 teaspoon minced fresh ginger
1/8 teaspoon red pepper flakes ( optional )
These Chicken-Stuffed Mushrooms are a tasty alternative to traditional stuffed mushrooms. Using ground chicken instead of sausage or beef makes them lighter and healthier. Instructions

1.Preheat the oven to 375°F and line a baking sheet with parchment paper.
2.Remove and finely chop the stems from the mushrooms. Set aside.
3.In a large bowl, combine the ground chicken, garlic, breadcrumbs, parmesan cheese, green onion, 2 tablespoons soy sauce, egg white, ginger, and red pepper flakes. Mix well.
4.Stuff the chicken mixture into the mushroom caps and place them on the lined baking sheet.
5.Brush the mushrooms with the remaining soy sauce.
6.Bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the chicken is cooked through.
