Ingredients

800 g tomatoes
8 eggs
1000 g gyoza skins
1/4 cup oil
1 1/2 teaspoons salt
2 teaspoons sugar
black vinegar ( for dipping )
Jiaozi (Chinese Dumplings) are a staple food in Chinese cuisine, enjoyed throughout the country as a beloved street food and appetizer. William Cai's Tomato and Egg Jiaozi is a twist on a classic recipe, incorporating fresh tomatoes into the traditional egg filling. Gyoza skins provide a crispy texture, while the Chinese black vinegar creates a tangy and savory dipping sauce. This appetizer is perfect for a snack, a quick meal or as part of a larger dinner spread.

Instructions

1.Cut the tomatoes into small cubes, add salt, and mix well. Wait for 10-15 minutes and drain the extra liquid.
2.Beat 8 eggs in a bowl and mix well with the drained tomatoes.
3.Place 1 tablespoon of the egg and tomato mixture on the middle of a gyoza skin. Moisture the edges of the skin with water. Fold the gyoza skin and seal the edges to create the traditional pleat pattern.
4.In a large non-stick skillet, heat 1/4 cup oil over medium heat.
5.Arrange the jiaozi in the skillet. Pour 1/2 cup water over the jiaozi and cover with a tight-fitting lid. Cook for 8-10 minutes until the water evaporates and the bottoms of the jiaozi become crisp and golden brown.
6.Serve hot with black vinegar for dipping.
