Ingredients

2 tablespoons olive oil
1/2 cup finely minced sweet onion ( red or other sweet )
1/4 cup red bell pepper , finely minced
2 tablespoons ginger , minced
1 tablespoon garlic , minced
1/4 cup sliced bamboo shoot ( I did n't have so used more celery )
1/4 cup celery , finely chopped
1 1/2 - 2 cups diced vegetarian chicken ( I used Fry Chik or use real chicken if you like )
1/4 cup soy sauce ( I used part soy part teriyaki sauce )
kosher salt
black pepper
1 cup cabbage , finely shredded
1/2 cup carrot , shredded
1 quart canola oil ( I used about 1/2 inch of oil and sauteed them )
15 egg roll wraps
2 Hass avocadoes , pitted , peeled , sliced into 12 pieces each
1 egg
1 tablespoon milk ( I used soy milk )
sweet chili sauce ( I used Thai sweet chli sauce )

Instructions

1.In a large pan, heat olive oil over medium heat and add minced onions, red bell peppers.
2.After 2-3 minutes, add minced ginger and garlic.
3.Add bamboo shoots, celery, and vegetarian chicken or real chicken, and cook for 2-3 minutes.
4.Add soy or teriyaki sauce, salt, black pepper, and mix well.
5.Add shredded cabbage and carrots and cook for 2 minutes.
6.In a separate bowl, whisk one egg and soy milk for an egg wash.
7.Place the egg roll wrap on a flat surface and add some filling on the bottom corner of the wrap.
8.Place sliced avocados on top of the filling.
9.Fold the bottom corner over the filling and roll slightly.
10.Fold the sides into the center and continue rolling.
11.Use the egg wash to seal the edges of the wrap.
12.Heat the canola oil in a pan and add the egg rolls, cooking for about 3-4 minutes on each side or until golden brown.
13.Serve hot with sweet chili sauce and enjoy!
