Ingredients

1 cup dried green mung beans
6 cups water
1/4 cup dried lotus seeds , with skins
3 ounces chinese brown sugar ( brown candy,1 1/2 slabs )

Instructions

1.Rinse and soak the green mung beans for two hours.
2.Drain and rinse the beans in cold water a few times.
3.Put 6 cups of water in a pot and the mung beans. Bring it to a boil.
4.Skim off the foam and simmer for 30 minutes.
5.Add the lotus seeds and cook for an additional 20 minutes until the lotus seeds are fully cooked and soft.
6.Mash the brown sugar candy into small pieces and add them to the pot. Stir until dissolved and turn off the heat. Serve hot.
