Ingredients

1 lb flank steak , sliced against the grain 1/4 inch thick slices
5 dried red chilies
1 garlic clove , minced
1 teaspoon fresh ginger , julienned
1 bell pepper , thinly sliced ( red , orange or yellow )
2 scallions , cut into 3 inch lengths then shredded

Instructions

1.In a small bowl, mix shaoxing rice wine (or dry sherry), chili paste, soy sauce, szechuan peppercorns, and black pepper together to make a marinade.
2.In a wok or large skillet, heat peanut oil over high heat until shimmering.
3.Add the beef slices and stir-fry for 1-2 minutes, until browned and cooked through.
4.Remove beef from the pan and set aside.
5.In the same pan, add dried red chilies and stir-fry for a few seconds until fragrant.
6.Add minced garlic, fresh ginger, and bell pepper and stir-fry for another minute or until bell pepper is slightly softened.
7.Return beef to the pan and add scallions.
8.Stir-fry everything for another minute until the scallions are wilted but still green.
