4 boneless chicken breasts , cut into 1 1/2 inch pieces
1 1/2 cups all-purpose flour

1 teaspoon ground ginger ( optional )
1 cup chicken stock
3 garlic cloves , smashed with a mortar and pestal
3 teaspoons hot red pepper sauce
1/4 cup white vinegar
1 cup sugar ( white or brown )
1 teaspoon sesame oil
3 tablespoons cornstarch
1/2 cup cold water
2 teaspoons sesame seeds ( untoasted )

Instructions

1.In a mixing bowl, combine flour, cornstarch, baking powder, and egg. Mix well.
2.Add soy sauce, sesame oil, ginger, and water. Mix until well combined.
3.Add chicken pieces and coat well with the batter.
4.In another bowl, mix chicken stock, garlic, pepper sauce, vinegar, sugar, and sesame oil. Stir until well combined.
5.In a small bowl, mix cornstarch with water.
6.Heat oil in a wok or deep pan over medium heat. Fry the battered chicken pieces in batches until golden brown, about 3-4 minutes.
7.Remove chicken pieces with a slotted spoon and drain on paper towels.
8.Discard the oil and wipe clean the wok or deep pan.
9.Pour in the chicken stock mixture and bring to a boil over medium heat while stirring.
10.Add the cooked chicken pieces and stir until coated with the sauce.
11.Add sesame seeds and stir.
