1 package of 14 oz . extra firm tofu , cut into rectangles ( about 1.5 in x 1 in )
1/8 cup ginger , sliced
1 1/2 cups butternut squash , cut into cubes ( about 1.5 in x 1.5 in )
1/2 tablespoon white pepper powder
1 cup green onion , chopped

Instructions

1.In a bowl, whisk together water, oyster sauce, soy sauce, and sugar.
2.Heat a large skillet or wok over high heat and add in the grapeseed oil.
3.Put the tofu in to fry until golden brown on both sides. When cooked, remove from pan and place on paper towels to dry.
4.With the remaining oil in the pan, add in the sliced ginger and fry until fragrant.
5.Add in the butternut squash and fry for several minutes.
6.Pour in the sauce from the bowl and cover the pan. Simmer on low heat for about 10 minutes.
7.Once the butternut squash is fork-tender, add in the fried tofu and white pepper powder. Mix well.
8.Turn off heat and add green onion to the pan. Stir it in and serve hot with rice or noodles.
