Ingredients

2 cups all-purpose flour
1 cup boiling water
1 tablespoon oriental sesame oil
1 duck , ready to cook
10 garlic cloves , smashed with flat of knife , peeled
10 slices fresh ginger , smashed ( about 1/4-inch each )
4 tablespoons soy sauce
1/2 cup chinese rice wine ( or sake )
1/2 cup fresh orange juice
1/2 cup cranberry-raspberry juice
1/2 cup water
2 tablespoons honey
1/2 cup hoisin sauce
1/2 cup julienned scallion
Lacquered Duck in Mandarin Pancakes, also known as Peking duck, is a traditional Chinese dish that is often served during special occasions or as a celebratory meal. Instructions

1.Mix flour and boiling water in a large mixing bowl until it becomes a dough. Cover the bowl and let rest for 30 minutes.
2.In a large saucepan, add garlic cloves, fresh ginger, soy sauce, Chinese rice wine, orange juice, cranberry-raspberry juice, water, and honey. Bring to a simmer over medium heat and cook until the mixture is reduced by half and has a syrupy texture.
3.Preheat the oven to 375°F. Place the duck in a roasting pan and fill the cavity with the scallions.
4.Brush the duck with hoisin sauce, and put the roasting pan in the oven. Roast the duck for about 25 minutes, brushing occasionally with more hoisin sauce.
5.Remove the duck from the oven and let it rest for 10 minutes before carving it.
6.While the duck is resting, cut the dough into 12 equal parts. Roll each one into a 6-inch pancake. Brush them with sesame oil and stack them. Cover the stacked pancakes with a warm towel and microwave for 30 seconds.
7.To serve, place a carved piece of duck in the center of a pancake, add a little of the glaze, and serve.
