Ingredients

1 lb boneless skinless chicken breast , julienned
1 teaspoon salt
1 egg white
1 tablespoon cornstarch
peanut oil , for stir-frying
2 cloves garlic , minced

1/4 cup carrot , 1 inch in length , julienne

4 dried black mushrooms , soaked in boiling water 20 minutes , stems removed , julienne
1/2 box firm tofu , drained and julienne ( tofu )
2 tablespoons light soy sauce
2 teaspoons sugar
1 tablespoon chili paste with garlic
1 tablespoon sherry wine
1/4 cup chicken stock
1 teaspoon cornstarch

Instructions

1.In a bowl, mix the julienned chicken with egg white, salt and cornstarch until well coated.
2.Heat a wok over high heat and add peanut oil. Once heated, add the chicken and stir-fry until cooked through, then remove from the wok.
3.In the same wok, add garlic and ginger and stir-fry for 30 seconds.
4.Add scallion, carrot, red pepper, green pepper, bamboo shoot, black mushrooms and tofu. Stir-fry for 1-2 minutes.
5.In a separate bowl, mix together light soy sauce, sugar, chili paste with garlic and sherry wine.
6.Add the cooked chicken back to the wok, pour in the sauce, and stir-fry for one minute.
7.Mix cornstarch with chicken stock and add to the wok. Cook and stir until heated through and the sauce thickens.
