20 medium shrimp , peeled and deveined ( leave tails on )
1/2 cup celery , cut into small pieces

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 pinch black pepper
1 pinch salt
3/4 cup cold water
1 large egg , beaten
2 cups olive oil or 2 cups peanut oil ( for deep frying )
1/2 cup cold water
1 tablespoon white vinegar
2 tablespoons granulated sugar
3 tablespoons ketchup
1 tablespoon dark soy sauce
2 tablespoons tapioca starch or 2 tablespoons cornstarch

Instructions

1.In a large bowl, mix together flour, baking powder, baking soda, black pepper and salt.
2.Add cold water and egg into the dry mixture and beat until mixture is well combined.
3.Add peeled and deveined shrimps into the batter and mix.
4.Heat olive or peanut oil in a frying pan over medium-high heat.
5.Dip the battered shrimps in hot oil and fry until golden brown.
6.Drain deep-fried shrimps with a paper towel and place on a plate.
7.In a separate bowl, mix cold water, white vinegar, granulated sugar, ketchup, dark soy sauce, and tapioca starch.
8.Heat a frying pan over medium-high heat and pour the mixture into the pan.
9.Add celery, cucumber, carrot, green pepper, and sweet red pepper and cook until the sauce thickens.
10.Serve the deep-fried shrimps on a plate and pour the cooked vegetable sauce on top.
