Ingredients

1 lb plum , halved and pitted
1 lb apricot , halved and pitted
1 1/4 cups cider vinegar
3/4 cup water
1 cup cider vinegar
1 cup firmly packed brown sugar
1 cup white sugar
1/2 cup lemon juice
1/4 cup chopped fresh ginger
1 small onion , sliced
1 serrano pepper , seeded and chopped ( or more )
2 small garlic cloves , sliced
4 teaspoons salt
1 tablespoon mustard seeds , toasted
1 cinnamon stick
Duck sauce is a respected staple in Asian cuisine, served as a condiment or dipping sauce and pairs well with roast duck, pork, and chicken. This version of the sauce is made from scratch and uses fresh fruit, vinegar, sugar and spices to provide a unique flavour that is both tangy and sweet. The sauce can be made ahead of time and kept in the fridge until you are ready to use it. The finished product is great for dipping, marinade, stir fry sauce or as a topping for your favourite dishes.

Instructions

1.In a medium saucepan, combine the plums, apricots, cider vinegar, and water over medium-high heat.
2.Bring to a boil and then reduce the heat to medium-low. Simmer for 25-30 minutes, stirring occasionally, or until the fruit is soft.
3.Remove from the heat and let cool for a few minutes.
4.Transfer the mixture to a blender or food processor, and blend until smooth.
5.Return the mixture to the saucepan and add in the cider vinegar, brown sugar, white sugar, lemon juice, ginger, onion, serrano pepper, garlic, salt, mustard seeds, and cinnamon stick.
6.Bring to a boil over medium-high heat, then reduce the heat and let simmer for 45-60 minutes, or until thickened.
7.Remove and discard the cinnamon stick.
8.Transfer the sauce to a jar or container and store in the refrigerator until ready to use.
