Ingredients

1 1/2 lbs taro and yams
4 tablespoons wheat starch ( Tang Mein flour )
1/3 cup boiling water
4 tablespoons shortening
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon five-spice seasoning
1 teaspoon sesame oil
1/4 teaspoon pepper
2 tablespoons oil
6 ounces chicken meat or 6 ounces pork , diced
4 ounces prawns , diced
3 dried mushrooms , soaked & diced
1/2 cup green peas
1 tablespoon chopped garlic
1 scallion , sliced
1/2 tablespoon chicken bouillon powder
1/2 tablespoon oyster sauce
1/2 teaspoon soya sauce , black ( thick )
1/2 teaspoon sesame oil
1/2 tablespoon cornstarch
1/2 teaspoon sugar
pepper
4 tablespoons water
5 cups oil , for deep-frying

Instructions

1.Cut the taro and yams into small cubes and steam them until soft.

3.Add the taro and yams, shortening, sugar, salt, five-spice seasoning, sesame oil, and pepper to the mixing bowl and mix well.
4.Heat oil in a wok and stir-fry the chicken or pork, prawns, dried mushrooms, and green peas until cooked evenly.
5.Add chopped garlic, scallions, chicken bouillon powder, oyster sauce, soya sauce, sesame oil, cornstarch, sugar, pepper, and water to the wok and stir-fry to combine.
6.Add the meat mixture to the mixing bowl with the taro and yams. Mix everything together to form a smooth filling.
7.Scoop out spoonfuls of the filling and shape into balls or disks.
8.Heat the deep-frying oil in a deep pot or wok until hot and carefully add the taro-yam puffs. Fry until golden brown and crispy.
9.Drain on paper towels and serve hot with your favorite dipping sauce.
