1 tablespoon kosher salt

6 medium garlic cloves , smashed
1 inch piece ginger , sliced
1 1 small thai bird chiles or 1 small jalapeno pepper , halved

Instructions

1.Preheat oven to 300°F.
2.In a bowl, whisk together the sherry or shaoxing wine, oyster sauce, brown sugar, kosher salt, and five-spice powder until sugar and salt are dissolved.
3.Heat vegetable oil in a large Dutch oven or oven-safe pot over medium heat. Add garlic, ginger, and chiles or jalapeno pepper, and sauté for 1 minute until fragrant.
4.Add the short ribs and brown evenly on all sides.
5.Pour the sherry mixture over the short ribs and bring to a simmer.
6.Cover the Dutch oven with a tight-fitting lid and transfer to the oven to braise for 3 hours.
7.Remove the lid and continue to cook for an additional 30 minutes until the short ribs are tender and the sauce has thickened. Serve immediately.
