Ingredients

1 bottle kombucha , unflavored organic and raw , not pasturized
1 cup black tea
1 tablespoon sugar
1/2 cup kombucha , brew from growing the SCOBY
1/2 cup white sugar
4 cups black tea or 4 cups green tea , cooled
2 1/2 ounces pure fruit juice , with no pulp
Kombucha is a fermented tea beverage that has become increasingly popular in recent years. It is made by adding a SCOBY (symbiotic culture of bacteria and yeast) to a solution of tea and sugar, allowing it to ferment and produce a slightly effervescent, tangy, and refreshing drink. The SCOBY, which stands for Symbiotic Colony Of Bacteria and Yeast, is a rubbery disc that forms on the surface of the Kombucha during fermentation. It acts as a living culture, breaking down the sugar and tea and producing a range of beneficial compounds. Making your own Kombucha at home is easy and cost-effective, and allows you to experiment with different flavors and tea blends.

Instructions

1.Brew the black tea and add 1 tablespoon of sugar to it and let it cool to room temperature.
2.Pour the unflavored kombucha and the cooled black tea into a large glass jar.
3.Add the 1/2 cup kombucha brew and the 1/2 cup white sugar, stir until combined.
4.Cover the jar with a dish cloth or paper towel and secure with a rubber band.
5.Leave the jar undisturbed in a warm, dark place for 7-10 days to allow the SCOBY to form.
6.Once a new SCOBY has formed, the Kombucha can be bottled and flavored (if desired) and left to ferment for an additional 1-2 days until carbonated.
