Instructions

1.Preheat the oven to 190°C/375°F.
2.In a small bowl, mix together the apricot jam and Dijon mustard. Set aside.
3.In a large skillet over medium-high heat, add 2 tablespoons of canola oil. When hot, add the sliced mushrooms and sauté until slightly browned, about 5-7 minutes.
4.In a food processor, pulse the cashews until coarsely ground. Add the sautéed mushrooms, scallions, shredded carrot, garlic, ginger, and soy sauce. Pulse until roughly blended.
5.On a clean work surface, lay out a wonton wrapper. Add about 1 tablespoon of the mushroom mixture to the center of the wrapper. Lightly wet the edges of the wrapper with water and fold in half diagonally. Press the edges together to seal. Continue with the remaining wrappers and filling.
6.Place the wontons on a parchment-lined baking sheet. Brush with the remaining 2 tablespoons of canola oil. Bake for 12-15 minutes, or until golden brown.
7.Serve the wontons with the apricot-mustard sauce for dipping.
