Instructions

1.Heat vegetable oil in a large skillet over medium-high heat.
2.Add carrots and onion to skillet, cook for 5 minutes until vegetables are slightly softened.
3.Add red bell pepper, broccoli and red cabbage to skillet, cook for 5 minutes until all vegetables are tenderly cooked.
4.Stir in chicken broth and chopped mint, cook for 2 minutes.
