2 onions , chopped
2 garlic cloves , crushed
2 teaspoons gingerroot , peeled , minced
1/4 cup olive oil
1 teaspoon turmeric
2 tablespoons paprika
1/2 teaspoon cayenne pepper ( can go up to 2 T . )
1 lb red lentil
4 cups water ( or stock )
salt & pepper

Instructions

1.Rinse the lentils and set them aside.

5.Pour in the lentils and water or stock, stirring to combine.
6.Bring the mixture to a simmer over medium-high heat.
7.Reduce the heat to low and cover the pot, cooking for about 25 to 30 minutes or until the lentils have melted into a thick paste.
8.Season with salt and pepper to taste. Serve hot with injera or rice.
