Ingredients

210 g cake flour
100 g butter
20 ml apricot jam
200 g sugar
2 eggs
250 ml milk
5 ml bicarbonate of soda
250 ml water
200 g sugar
50 ml white vinegar

Instructions

1.Preheat the oven to 175°C. Grease a 20cm by 20cm baking dish with butter and 10ml of the apricot jam.
2.In a large bowl, beat the butter and sugar together until light and fluffy. Gradually add in the eggs and continue mixing to combine.
3.Sift the cake flour and bicarbonate of soda together and add this to the butter-sugar mixture.
4.Stir in the milk and mix well to combine.
5.Pour this batter into the prepared baking dish and smooth the top with a spatula.
6.Place the dish in a deep roasting tray and fill the roasting tray with boiling water until the water level reaches half-way up the side of the baking dish.
7.Bake for 1.5 hours or until the pudding is cooked through and golden brown on top.
8.In a small saucepan, combine the water, the remaining apricot jam, the white vinegar, and the remaining sugar. Stir this mixture over low heat until the sugar dissolves. Turn up the heat and bring this mixture to a boil.
9.When the pudding is done, remove it from the oven and pour the hot sauce over it.
10.Serve this warm with custard or cream.
