Spiced Melktert, also known as Dutch Milk Tart, is a custard-based dessert that is popular in South Africa. This recipe adds a twist by infusing the custard filling with warm spices, giving the tart a sweet and spicy flavor. The filling is smooth and creamy, while the crust provides a crumbly contrast. This dessert is perfect for a special occasion or for treating yourself to something sweet and indulgent.

Instructions

.Preheat your oven to 375°F (190°C).
.In a saucepan, heat the milk, cinnamon stick, cardamom pods, and nutmeg over medium heat until simmering. Remove from heat and let the spices steep for 10 minutes.
.In a mixing bowl, whisk together the egg yolks, cake flour, cornstarch, and superfine sugar until smooth.
.Slowly pour the spiced milk mixture into the egg mixture, whisking constantly to prevent the eggs from cooking. Return the mixture to the saucepan and cook over medium heat, stirring constantly, for 5-7 minutes until the mixture thickens.
.Remove from heat and stir in the butter and vanilla extract until combined.
.In a separate mixing bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the milk mixture until fully combined.
.Pour the mixture into the pie crust and sprinkle with ground cinnamon.
.Bake for 25-30 minutes, until the filling is firm and the crust is golden brown. Let cool completely before serving with whipped cream.
