Ingredients

6 chicken thigh fillets
150 g pizza sauce ( I use 3 of the sachets of the boxed Leggos Pizza Sauce )
2 tablespoons curry powder ( More or less to taste , I use Clives MILD Curry Powder )
1 small lettuce ( Sliced up or how you prefer )
15 cherry tomatoes ( Sliced in half or left whole )
1 medium cucumber ( Sliced as you prefer )
15 fresh coriander leaves ( Roughly chopped or whole )
150 g danish feta ( Cut into small cubes , Smooth Feta is similar to Danish Feta )
Scrumptious Chicken Curry, Coriander & Danish Feta Salad is a delicious and healthy meal that is quick and easy to prepare. Instructions

1.Preheat the oven to 200°C.
2.Place the chicken thigh fillets on a baking dish and pour pizza sauce over them.
3.Sprinkle the curry powder over the chicken and pizza sauce mixture.
4.Bake for 25-30 minutes until fully cooked.
5.In a large bowl, mix the lettuce, cherry tomatoes, cucumber, coriander leaves and cubed feta together.
6.Slice the cooked chicken fillets into thin strips and add to the salad mixture.
7.Toss everything together and serve immediately.
