4 tablespoons butter

1 teaspoon turmeric
1/2 teaspoon saffron , toasted , crushed and soaked in 1 tbsp warm water for 15 minutes
1/2 cup red wine or 1/2 cup light beer
2 teaspoons fresh lemon juice
2 teaspoons kosher salt
1/2 teaspoon white pepper
2 teaspoons hot chili sauce ( or generous pinch crushed red pepper )
1 lb shrimp , peeled and deveined

Instructions

1.In a large skillet, melt 4 tablespoons of butter over medium heat.
2.Add 1/4 cup of finely chopped onions and cook until translucent, about 3-4 minutes.
3.Add 8 finely chopped garlic cloves to the skillet and cook for another 2-3 minutes, until fragrant.
4.Add 1/2 cup of water, 4 tablespoons of finely chopped fresh coriander, 1 teaspoon of turmeric, and 1/2 teaspoon of crushed saffron that has been soaked in 1 tablespoon of warm water for 15 minutes to the skillet.
5.Stir in 1/2 cup of red wine or light beer, 2 teaspoons of fresh lemon juice, 2 teaspoons of kosher salt, 1/2 teaspoon of white pepper, and 2 teaspoons of hot chili sauce or a pinch of crushed red pepper.
6.Cook the mixture for about 5-7 minutes, or until the sauce has thickened slightly.
7.Add 1 pound of peeled and deveined shrimp to the skillet and cook for about 5 minutes, or until the shrimp are pink and cooked through.
