Ingredients

1 bone-in leg of lamb , trimmed of any papery skin
6 garlic cloves , cut into thin slivers
6 slices fresh ginger , thin slices , cut Into thin slivers
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1/4 cup firmly packed brown sugar
1/4 cup Dijon mustard
1 tablespoon dry mustard
1/4 cup fresh lemon juice , and zest
1/4 cup olive oil
4 -6 garlic cloves , minced
1 tablespoon minced fresh ginger
1/4 cup sliced scallion
red pepper flakes
1/2 teaspoon ground coriander
1/2 teaspoon cumin seed , toasted
salt & freshly ground black pepper , to taste
Capetown lamb is a recipe from South Africa, that’s perfect for those looking to try something new. Instructions

1.Preheat oven to 325°F (160°C).
2.Make small slits in the lamb and insert slivers of garlic and ginger. Season with salt and pepper.
3.In a bowl, mix Worcestershire sauce, soy sauce, brown sugar, Dijon mustard, dry mustard, lemon juice and zest, olive oil, minced garlic, minced ginger, sliced scallion, red pepper flakes, coriander, and toasted cumin seeds.
4.Pour marinade over the lamb. Cover and refrigerate for at least 2 hours up to overnight.
5.Bring the lamb to room temperature. Roast uncovered for approximately 2 hours, basting every 20 minutes with the marinade juices.
6.Once cooked to your liking, remove from oven and let rest for 10-15 minutes before carving. Serve with your favorite side dishes.
