4 quinces , ripe ( ask the seller about ripeness )
4 ounces creme fraiche , thick ( or thick cream , 125 g )
3 ounces superfine sugar ( caster sugar , 90 g )
1 teaspoon vanilla
5 ounces granulated sugar
1 pinch salt

Instructions

1.Preheat the oven to 350 F (175 C).
2.Wash the quinces, remove their fuzz and cut into quarters or eighths, depending on their size. Remove their cores and cut each quarter or eighth in half or three pieces crosswise.
3.In a large mixing bowl, mix the quinces, superfine sugar, vanilla, and salt. Leave aside for 10-15 minutes until the quinces release their juice.
4.Transfer the quince mixture into a baking dish, aiming for a single layer. Pour the juice that was released over it.
5.In a small bowl, mix the creme fraiche and granulated sugar until everything dissolves. Spread it over the quinces.
6.Bake the quinces for about 45-50 minutes, until golden brown, caramelized, and soft.
7.Serve as a dessert or enjoy as a light and healthy breakfast!
