Instructions

1.In a saucepan, heat water and sugar on medium heat until sugar dissolves.
2.To the saucepan, add 4 rosemary sprigs and rooibos tea leaves. Let it steep for 20 minutes.
3.Remove from heat and let it cool down completely. Discard the rosemary and tea leaves.
4.In a pitcher, mix together the rosemary-rooibos syrup, 3/4 cup gin, and 3 tablespoons of lemon juice.
5.To serve, fill glasses with ice cubes. Pour the Capetown Collins mixture into each glass.
6.Garnish with the remaining rosemary sprig and lemon wedge. Serve and enjoy!
