1 teaspoon vanilla ( best is to use the scraped-out seeds from 1 pod )
1/2 teaspoon cinnamon , ground
2 star anise
1/4 teaspoon ground mixed spice ( the commercial `` mixed-spice '' )
2 eggs
3 egg yolks
1/2 cup brown sugar
1/2 cup brown sugar ( distributed , and caramelised with a kitchen blowtorch )

Instructions

1.Preheat your oven to 300°F (150°C).
2.In a pan, heat cream, milk, vanilla, cinnamon, star anise, mixed-spice, and brown sugar until sugar is dissolved and mixture is hot.
3.In a mixing bowl, whisk together eggs and yolks.
4.Gradually pour milk mixture into egg mixture while whisking constantly.
5.Strain mixture through a fine-mesh sieve.
6.Pour mixture into ramekins.
7.Place ramekins in a large baking dish and fill the baking dish with water to reach halfway up the ramekins.
8.Bake custards for 45-50 minutes until they are set.
9.Chill custards in the fridge for 2-3 hours or overnight.
10.Sprinkle brown sugar over the chilled custards and caramelize with a kitchen blowtorch just before serving.
