Instructions

1.In a mixing bowl, sift cake flour, salt, and baking soda.
2.In another mixing bowl, whisk the egg yolks, oil and milk together until light and frothy.
3.Add the water and lemon juice, then whisk.
4.Pour the wet ingredients into the dry ingredients and whisk until the mixture forms a smooth batter.
5.In a separate bowl, beat the egg whites until soft peaks form.
6.Use a spatula to fold in the beaten egg whites, adding a dash of lemon juice, into the batter.
7.Heat a crepe pan on medium heat, use a ladle to pour the batter into the pan and spread it out by rotating the crepe pan.
8.After 1-2 minutes, when the edges start to curl up and the crepe bottom is golden, flip the crepe over and cook the other side until golden brown.
9.Repeat until you've used up all the batter.
10.Sprinkle cinnamon-sugar mixture over the crepe and fold it in half or quarters.
