Ingredients

1 1/2 teaspoons whole cloves
2 teaspoons fresh cardamom pods , crushed ( or 1 tsp ground cardamom )
7 -9 tablespoons chopped fresh ginger
1/2 bay leaf
1 teaspoon fennel
1 teaspoon peppercorn
1 stick cinnamon
1/2 cup red rooibos tea leaves
1/4 cup honey ( ( 4 tbsp or 4 oz-start with 1 tbsp honey and add more to taste )
2 cups milk ( I use almond , soy , or rice milk )

Instructions

1.In a large pot, combine the cloves, cardamom, ginger, bay leaf, fennel, peppercorn, and cinnamon with 3 cups of water.
2.Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
3.Strain the mixture and discard the solids.
4.Add the red rooibos tea leaves and honey to the mixture.
5.Add 3 cups of milk and bring the mixture to a gentle simmer. Stir occasionally.
6.Once heated through, remove from heat and serve in mugs.
