Ingredients

1 lb chickpeas
water
4 garlic cloves
2 onions
1/2 cup fresh cilantro , finely chopped ( known as fresh coriander )
1 white bread roll
2 tablespoons flour
1 egg
1 teaspoon salt
1 teaspoon pepper ( usually white pepper )
1 teaspoon coriander seed ( crushed )
1 teaspoon baking powder
1 teaspoon sesame seeds
oil ( for frying )
Sudanese Tamia, also known as falafel, is a popular street food in Sudan. Instructions

1.Soak the chickpeas overnight in water.
2.Peel and chop the onion and garlic.
3.Rinse the chickpeas and grind them in a food processor.
4.Mix the ground chickpeas, chopped onion and garlic, chopped cilantro, flour, baking powder, salt, pepper, crushed coriander seed, sesame seeds, egg, and water in a large bowl.
5.Heat oil in a large skillet over medium heat.
6.With a spoon, form small patties with the mixture and fry them in the heated oil until they are golden brown.
7.Drain the patties on paper towels.
8.Serve the patties hot with your favorite dipping sauce.
