1 cup semolina

1 1/2 teaspoons baking powder
blanched almond ( optional )
1 1/2 cups sugar

Basboosa-Haressa Semolina Cake is a traditional Middle Eastern dessert that is made of semolina, Greek yogurt, sugar, oil, and baking powder. It is a popular pastry in Egypt, Saudi Arabia, Lebanon, and other countries in the region and is sometimes known as Haressa Cake, aka Namoura or Revani. Basboosa is a sweet, dense, and syrup-soaked cake that is flavored with sweet cardamom and generously topped with crunchy blanched almonds. Instructions

1.Preheat your oven to 180C.
2.Grease a 9x13 inch baking dish, and set aside.
3.In a large mixing bowl, combine semolina, Greek yogurt, caster sugar, oil and baking powder and mix well to make a slightly sticky dough.
4.Pour the dough into the greased baking dish and spread it evenly with a spatula.
5.Use a knife or spatula to make diamond shaped cuts on the surface of the cake.
6.Place a blanched almond on the center of each diamond cut on the cake (optional).
7.Bake the cake for 35-40 minutes until it turns golden brown in color.
8.In the meantime, prepare the syrup by mixing 1 1/2 cups of sugar and 2 cups of water in a saucepan over medium heat.
9.Stir the mixture until the sugar dissolves completely, then let it come to a boil and simmer for 5-7 minutes.
10.Turn off the heat, then add a splash of lemon juice to the syrup.
11.Once the cake is done, remove it from the oven and pour the syrup over the hot cake while it is still in the baking dish.
12.Allow the cake to cool completely before serving.
