Ingredients

1/2 kg whole grain barley
1/4 kg cumin seed
1/4 kg coriander seed
1 cup sweet cumin
olive oil
sugar or dates

Instructions

1.Rinse the barley under running water and set aside.
2.In a dry pan, lightly toast the cumin and coriander seeds for 3-5 minutes or until fragrant. Remove from heat.
3.In a large pot, bring 5 cups of water to a boil. Add the toasted spices, barley, and sweet cumin. Stir and reduce heat to low. Cover and simmer for 30-40 minutes or until the barley is tender.
4.Remove from heat and let cool for 5 minutes.
5.In a separate pan, heat the olive oil over medium heat. Add the cooked barley mixture and sauté for 5-7 minutes or until lightly browned. Add dates or sugar to taste, if desired.
6.Serve hot and enjoy!
