Ingredients

1/2 cup halved walnuts
1 cup self-raising flour
1/4 teaspoon bicarbonate of soda
5 tablespoons caster sugar
3/4 cup milk
1 egg , lightly beaten
20 g melted butter
1 medium-ripe banana , mashed
icing sugar , for dusting
1 cup warm honey

Instructions

1.Toast walnuts in a skillet over medium-high heat for 3-5 minutes or until lightly browned, stirring occasionally. Cool.
2.In a large bowl, whisk together the flour, bicarbonate of soda, and caster sugar. Create a well in the center.
3.In another bowl, combine the milk, egg, and melted butter. Mix well and pour it into the well in the flour mixture, and stir just until combined. Add mashed banana and toasted walnuts, stir gently until combined.
4.Heat a non-stick pan over medium heat. Using a 1/4 cup measure, pour approximately 1/4 cup batter per pancake onto the pan. Cook until the edges are golden brown and the surface is covered in small bubbles, then flip and cook until the other sides are golden brown, about 1-2 minutes. Repeat with the remaining batter.
5.Stack cooked pancakes on a plate, and drizzle with honey and dust with icing sugar.
