Orange Cake, or Gateau a L'Orange De Madame Mahjoub, is a classic dessert that originated in North Africa. This particular recipe features blood oranges or thin-skinned juice oranges, for a sweet and tangy flavor. Made with olive oil instead of butter, this cake is moist and light while still being rich in flavor. The orange slices on the bottom of the cake pan create a beautiful pattern on top of the cake when it is turned out, making it as aesthetically pleasing as it is delicious. Serve it as a dessert after dinner or as a sweet treat with coffee or tea.

Instructions

1.Preheat oven to 350°F and grease a 9-inch cake pan.
2.Finely grate the zest from one of the oranges and set aside. Cut both oranges into thin slices and remove any seeds.
3.Mix together the flour, baking powder, baking soda, and salt in a medium bowl.
4.In a separate large bowl, beat the eggs and sugar together for several minutes until pale and thick. Mix in the olive oil, vanilla extract, and almond extract if using. Stir in the flour mixture and orange zest until just combined.
5.Arrange the orange slices in a single layer on the bottom of the cake pan. Pour the batter over the oranges, making sure to spread it evenly.
6.Bake for 40-50 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
7.Dust the top of the cake with powdered sugar before serving.
