160 g butter , softened
310 g sugar
1 1/2 teaspoons chopped of fresh mint
6 eggs
230 g desiccated coconut
210 g self-raising flour
200 ml water
180 g sugar

Moroccan Honey & Mint Syrup Cake is a traditional dessert from Morocco. It's a popular cake that's often served during special occasions like weddings and celebrations. Instructions

1.Preheat oven to 160°C (325°F). Grease a 22cm cake tin and line base and sides with baking paper.
2.Using an electric mixer, cream butter, sugar, and chopped mint until light and fluffy.
3.Add eggs, one at a time, and beat well after each addition.
4.Stir in desiccated coconut and sifted flour.
5.Add water and mix until just combined.
6.Pour mixture into the prepared cake tin and bake for 45-50 minutes or until a skewer inserted comes out clean.
7.In a saucepan, combine sugar, 1 cup of mint leaves, butter, honey, and 1/2 cup of water. Bring to boil while stirring, then reduce heat and simmer for 5 minutes.
8.Remove from heat and strain syrup.
9.When the cake is cooled, pierce it with a skewer a few times and pour syrup over it.
10.Toast sliced almonds in a dry frying pan over medium heat, stirring constantly until golden.
11.Decorate the cake with toasted almonds and remaining mint leaves.
