Ingredients

2 1/2 liters water
1 cup water
1 lemon , juice of
3 teaspoons plain flour
4 pieces lamb or 4 chicken pieces , preferably on the bone
1 carrot
1 potato
1 courgette ( zucchini )
2 fresh tomatoes
1/2 bunch coriander ( cilantro )
1 fresh fennel bulbs or 1 pinch fennel seed
1 pinch celery seed
1 medium onion
4 garlic cloves
4 tablespoons chickpeas
4 tablespoons green lentils
1 tablespoon olive oil oil ( for frying )
3 teaspoons ras el hanout spice mix ( heaped )
salt and pepper
Moroccan Harira is a traditional soup that is a favorite in Algeria, but is now enjoyed around the world. It is typically made during the holy month of Ramadan to break the fast at sunset, but can be enjoyed at any time of the year. This hearty soup is packed with vegetables, legumes, and spices, making for a delicious and healthy meal that will keep you full and satisfied.

Instructions

1.Boil the lamb or chicken in 2.5 liters of water until cooked through. Remove and set aside.
2.In a separate pot, blend the tomatoes, onion, garlic, and coriander to make a smooth mixture. Set the pot over medium-high heat and add the olive oil and flour along with the tomato mixture.
3.Add 1 cup of water, the chickpeas, lentils, celery seed, fennel seed, ras el hanout spice mix, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
4.While the soup is simmering, peel and chop the potato, carrot, and courgette (zucchini) into small pieces. Add them to the pot, along with the lamb or chicken. Add more water as needed to achieve desired consistency. Simmer for an additional 20 minutes.
5.Once the vegetables are tender, add lemon juice to taste and serve hot. Enjoy with crusty bread or rice.
