1 kg couscous
250 g sultanas
parsley ( lots )
8 red onions
4 tomatoes
1 whole chicken ( or beef )
1 cinnamon stick
1/2 teaspoon pepper
4 teaspoons saffron
4 teaspoons ginger
salt
4 teaspoons sugar
water
olive oil ( for frying )

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Rinse the couscous and cook according to instructions. Spread the cooked couscous onto a large platter.
3.Place the sultanas in a bowl and cover with hot water. Set aside.
4.Finely chop the parsley and mix with the couscous.
5.Fry the peeled and halved red onions in olive oil until soft. Add the peeled and chopped tomatoes and fry for a further 2-3 minutes.
6.Place the chicken in a pot and cover with water. Add cinnamon stick, pepper, saffron, ginger, salt, and sugar. Bring to a boil and then simmer for 20-25 minutes or until the chicken is cooked.
7.Remove the chicken from the pot and place on the couscous. Arrange the onions and tomatoes around the chicken and couscous. Drain the sultanas and sprinkle over the top.
8.Serve while hot.
