Ingredients

1 chicken , cut into 6-8 pieces
salt and pepper
2 teaspoons ground cumin ( to taste )
2 -3 teaspoons ground cinnamon
1 teaspoon turmeric
1 pinch saffron
1 teaspoon ground ginger
3/4 lb pitted prune
2 large Spanish onions , sliced lengthwise
1 cup whole blanched almond
vegetable oil
toasted sesame seeds ( optional )
Esther’s Moroccan chicken tagine is a classic Moroccan dish made with savory spices and succulent chicken. It is typically served with couscous, rice, or crusty bread to soak up the flavorful sauce. Instructions

1.Preheat oven to 375 degrees Fahrenheit (ok, we know this is not really an instruction, but preheating the oven is quite important).
2.Season chicken with salt and pepper to taste and mix with cumin, cinnamon, turmeric, saffron, and ginger.
3.Heat a heavy-bottomed Dutch oven or tagine over high heat. Add 2 tbsp of vegetable oil once the oven is heated.
4.When the oil is hot, add chicken and brown for 3-4 minutes. You may need to brown the chicken in batches to avoid over-crowding. Remove the chicken from the pot and set aside. Reduce heat to medium-high.
5.Add onions and cook until they begin to brown (5-7 minutes).
6.Place the chicken back into the pot, ensuring it is nestled into the onion mixture. Add enough water to cover the chicken by half and bring to a simmer.
7.Once the mixture comes to a simmer, cover the pot with a lid and move it to the preheated oven. Bake for 30 minutes.
8.Add prunes and almonds to the pot, stir gently and bake for another 30-40 minutes or until the chicken is cooked through and fork-tender. Stir the pot gently once or twice during cooking to ensure the ingredients mix well.
9.Once cooked, remove the pot from the oven and let it stand for a few minutes before serving. Sprinkle sesame seeds on top for garnish (if desired). Serve hot.
