Instructions

1.In a large mixing bowl, combine 1 minced shallot, 2 tbsp of chopped fresh cilantro, a seeded minced jalapeno chile, 1 minced garlic clove, 1 1/4 tsp of salt, 3/4 tsp of black pepper, 1/2 tsp of paprika, 1/2 tsp of ground cumin and 1 3/4 lbs of ground lamb.
2.Mix the ingredients well and form 4 patties; brush each with olive oil and chill until ready to grill.
3.In a mixing bowl, whisk together the fresh lemon juice, honey, 2 tbsp of olive oil, and salt and pepper to taste; then add the cubed beets, cubed orange flesh, chopped red onion, and olives.
4.Stir to combine and refrigerate until ready to serve.
5.Preheat the grill to medium-high heat; add the lamb burgers and cook for 4-5 minutes per side.
6.Toast the buns and layer with lettuce, mayonnaise, and the lamb patties.
7.Serve with the beet salsa.
