4. Veggie Quesadillas: Begin by sautéing a diced bell pepper and onion together in a pan until they’re tender. Then, spread some refried beans over one side of a tortilla and add the pepper and onion mixture on top. Finally, sprinkle some shredded cheese over the filling and fold the other half of the tortilla over the top. Cook each tortilla in a pan until the cheese is melted and the tortilla is crispy on both sides. Serve with sour cream and salsa.

5. Chickpea Curry: Heat up a tablespoon of oil in a pot on the stove and sauté a diced onion until it’s translucent. Then, add in some minced garlic and ginger and cook for another minute. Next, add in a can of chickpeas (drained and rinsed) and a can of diced tomatoes. Season the mixture with curry powder, turmeric, and salt to taste. Let everything simmer together for about 20 minutes, or until the sauce has thickened. Serve over rice.
