If you have an 18 month old, you know that mealtime can be a bit of a challenge. Toddlers are notoriously picky eaters, but it’s important to make sure they are getting the nutrients they need to grow and develop. Here are some meal ideas that are sure to please even the most finicky eater:
1. Banana Pancakes: Mash a ripe banana and mix it with an egg, a splash of milk, and a sprinkle of cinnamon. Cook the mixture in a non-stick pan like you would a regular pancake. Serve with a dollop of Greek yogurt and a drizzle of honey.
2. Mini Meatballs: Mix ground turkey or beef with a grated carrot, a grated zucchini, an egg, and some breadcrumbs. Roll into small meatballs and bake in the oven until cooked through. Serve with a side of steamed broccoli or green beans.
3. Veggie Quesadilla: Spread some refried beans on a whole wheat tortilla and top with grated cheese and finely chopped vegetables like bell peppers, cherry tomatoes, and spinach. Fold the tortilla in half and cook in a pan until the cheese is melted and the tortilla is crispy.
4. Mac and Cheese with Hidden Veggies: Cook some whole wheat pasta until al dente. In a blender, puree some steamed broccoli, carrots, and butternut squash with a bit of milk until smooth. Mix the puree into the cooked pasta along with some grated cheese and a bit of butter. Your toddler won’t even know they’re eating vegetables!
5. Sweet Potato Fries: Cut a sweet potato into thin fries and toss with a bit of olive oil and some seasoning like garlic powder or paprika. Bake in the oven until crispy. Serve with a side of ketchup or hummus for dipping.
Remember, toddlers need to eat a variety of different foods to get all the nutrients they need. Offer a mix of protein, whole grains, and fruits and vegetables at every meal. And don’t forget to make mealtime fun and engaging – toddlers love to dip things and eat with their hands, so try to incorporate that into your meals whenever possible!
