Ingredients

500 g strawberries , hulled
75 g caster sugar
125 g all-purpose flour
1 pinch salt
3 eggs , lightly beaten
300 ml milk
30 g powdered sugar
Strawberry Clafouti is a classic French dessert that originated in the Limousin region of France. Typically made with cherries, this recipe uses fresh strawberries for a sweet and fruity twist. The batter is light and fluffy, making for a texture that is somewhere between a custard and a flan. Instructions

1.Preheat the oven to 180°C.
2.Place the strawberries in a bowl and sprinkle with 25g of caster sugar. Mix lightly, then set aside to allow the strawberries to macerate for 10 minutes.
3.Meanwhile, sift the flour and salt into a bowl and make a well in the center. Add the eggs and the remaining caster sugar.
4.Gradually pour in the milk, whisking constantly until the batter is smooth.
5.Grease a 25cm-diameter gratin dish. Pour in the batter to a depth of 1cm.
6.Using a slotted spoon, arrange the strawberries on top of the batter, then sprinkle with the powdered sugar.
7.Pour the remaining batter over the strawberries.
8.Bake for approximately 30 minutes, or until the clafouti is puffed and golden-brown in color. Serve hot or at room temperature.
