Ingredients

4 fresh eggs
1 pinch sugar
100 g caster sugar
1 vanilla pod
250 g mascarpone
350 g strawberries
3 tablespoons kirsch
30 sponge cake fingers
4 ripe apricots
2 tablespoons coarsely chopped hazelnuts

Instructions

1.Separate egg whites and yolks in two mixing bowls.
2.Whisk egg whites with a pinch of sugar until they form stiff peaks.
3.In the other bowl whisk egg yolks with 100g caster sugar and vanilla pod seeds until mixture becomes creamy and light.
4.Add 250g of mascarpone into the egg yolk mixture and mix well.
5.Mix 3 tablespoons kirsch with 3 tablespoons of water in a shallow bowl.
6.Dip sponge fingers one by one in the kirsch mixture, making sure both sides are soaked.
7.Spread a thin layer of mascarpone cream over the bottom of a serving dish.
8.Begin to layer the soaked sponge fingers over the cream.
9.Cut the apricots into small cubes and mix with chopped strawberries.
10.Spread half of the fruit mixture over the layer of sponge fingers.
11.Cover with another layer of the mascarpone cream.
12.Repeat the layers of soaked sponge fingers, fruit mixture and cream until you use all the ingredients.
13.Finish with a layer of cream on top and decorate with the remaining fruit mixture and chopped hazelnuts.
14.Chill in the refrigerator for at least 3-4 hours before serving.
