Ingredients

2 lbs pork spareribs , cut into 3 inch pieces
2 cups chinese rice wine
2 tablespoons Chinese five spice powder
3 1/4 cups canola oil
10 garlic cloves
8 inches piece peeled ginger
4 dried arbol chiles
3 tablespoons fennel seeds
5 star anise
2 sticks cinnamon , broken in half
2 tablespoons sugar
1 teaspoon kosher salt
4 Thai red chili peppers , stemmed sliced
2 Thai green chili , stemmed sliced
1/3 cup sichuan red chili oil ( hong you )
steamed rice , for serving
Lu Rou Sichuan, also known as Triple-Cooked Spareribs With Chiles, is a popular Sichuan dish enjoyed in both China and around the world. The dish is characterized by its tender and flavorful pork spareribs that have been marinated and stir-fried with a medley of aromatic spices, chiles, and sichuan red chili oil. Instructions

1.In a large bowl, mix the pork spareribs with Chinese rice wine and Chinese five spice powder. Cover and refrigerate for at least 4 hours.
2.In a wok or large skillet, heat the canola oil over medium-high heat. Add the marinated pork spareribs and cook for 10-15 minutes until golden brown. Transfer the pork to a plate and set aside.
3.Discard all but 1/4 cup of the oil from the wok/skillet. Reheat the oil over medium-high heat. Add the garlic, ginger, dried arbol chiles, fennel seeds, star anise, and cinnamon to the oil. Stir-fry until fragrant, about 1 minute.
4.Add the sugar, kosher salt, Thai red chili peppers, and Thai green chili to the wok/skillet, followed by the pork spareribs. Stir-fry everything together for 1-2 minutes.
5.Add the sichuan red chili oil to the wok/skillet, and continue stir-frying to fully coat the pork spareribs with the sauce.
6.Serve hot with steamed rice.
